Audra Lalli is the owner of Mad Hatter Bakery located in Newport, Rhode Island. Her speciality is creating cakes that are themed for birthday parties or other special events. She is also known for replicating invitations on her cakes. She recently brought this beautiful Alice in Wonderland cake to a party and it was a huge hit! Guests were so impressed that they set their Magnolia cupcake aside and finished their slices of the Mad Hatter cake. She says the phone is now ringing off the hook for cake orders.
This is a great cake to make for a Mad Hatter tea party or Alice in Wonderland themed party. It is very colorful and the Cheshire Cat and golden clock are a nice touch. The hat is really cute too!
To assemble the cake, start with the largest tier and ice the top. Add the bottom sloped piece and ice again. Next roll out your pink fondant and cut a strip that is wide enough to cover the hat’s brim and long enough so that you can twist the end of the strip together and lay it on the hat. I used color luster dusts to give the yellow strip a distressed look. Finally, using royal icing, spread the icing directly onto the pedestal or cake board and place your hat cake right in the middle.
